The Canadian turkey market is operated under a Canadian system called “supply management” which is a marketing system that matches turkey supply to demand.
Supply management provides a predictable market for Canada's 540-plus turkey farmers, as well as turkey processors. It also assures consumers that they will be able to receive healthy, safe, high quality turkey on a year round basis at competitive prices.
The number of turkeys each farmer produces is determined by a national and provincial quota system.
Farmers pay levies to their provincial boards and to the Turkey Farmers of Canada , based on each kilogram of turkey that they sell. This money is used for administration and to represent the interests of Canadian turkey farmers.
